Healing White Bean and Ginger Stew (healthy baked beans on toast recipe)

Is there anything better than a healing bowl of fragrant and delicious beans on a weekend morning?  This spicy white bean stew is my all time favourite ‘healthy baked beans’ recipe. It’s perfect for brunch time, with a little sourdough on the side. Add lots of garlic, ginger, spinach and onion  — all of which have great medicinal qualities.

Ingredients For Making My Healthy Baked Beans Recipe

  • 4 organic garlic cloves, crushed and chopped
  • One large red onion, chopped into thin slices
  • One tin of chopped tomatoes
  • One tin of cannellini beans (soaking and cooking these beans usually leads to a nicer taste. however tinned cannellini beans can be really convenient)
  • One thumb sized chunk of fresh ginger, finely chopped
  • 3 small green chillies, finely chopped
  • 1-2 large handfuls of organic spinach

How to make it

  1. Add all the chopped ingredients to a small oven proof dish, along with the tinned tomatoes and cooked cannellini beans.
  2. Bake at 180 degrees for 20 minutes or so.
  3. Remove from the oven and serve with a portion of toast, or few slices of baked sweet potato.
