Healing White Bean and Ginger Stew (healthy baked beans on toast recipe)
Is there anything better than a healing bowl of fragrant and delicious beans on a weekend morning? This spicy white bean stew is my all time favourite ‘healthy baked beans’ recipe. It’s perfect for brunch time, with a little sourdough on the side. Add lots of garlic, ginger, spinach and onion — all of which have great medicinal qualities.

Ingredients For Making My Healthy Baked Beans Recipe
- 4 organic garlic cloves, crushed and chopped
- One large red onion, chopped into thin slices
- One tin of chopped tomatoes
- One tin of cannellini beans (soaking and cooking these beans usually leads to a nicer taste. however tinned cannellini beans can be really convenient)
- One thumb sized chunk of fresh ginger, finely chopped
- 3 small green chillies, finely chopped
- 1-2 large handfuls of organic spinach
How to make it
- Add all the chopped ingredients to a small oven proof dish, along with the tinned tomatoes and cooked cannellini beans.
- Bake at 180 degrees for 20 minutes or so.
- Remove from the oven and serve with a portion of toast, or few slices of baked sweet potato.
