Simple And Healthy Frittata Recipe

This week I’ve been thinking about these lovely words from the 13th century mystic poet Hafiz, and making simple home lunches with the last of the seasons vegetables.

Time is the shop
Where everyone works hard
To build enough love
To break the
Shackle.

I love the idea of time being used to build love. After all, isn’t that what we’re all really doing here? Isn’t that the story beneath the story for all of us?

Whatever your ‘shop’ looks like; kitchen, classroom, office or ward, time is the shop where everyone works hard to build enough love to break the shackle.

Now, let’s make this lovely lunch recipe, it’s a tray bake with dips!

Simple And Healthy Frittata Recipe

Ingredients

  • 2 medium carrots
  • 2 small/medium potatoes
  • 1 medium onion or one small chopped leek
  • 1/3 of a white cabbage
  • 3 eggs
  • a few crackers or breadcrumbs

Frittata Recipe


1. Grate a couple of carrots and potatoes, along with one one grated onion and a handful of grated white cabbage.

2. Whisk 3 eggs and season with salt and pepper.

3. Add the egg mix to the veg along with a handful of 
breadcrumbs ( or crackers as pictured)

4. Mix together and then add to a small oven dish ( press the mix in firmly) and bake at around 180/200 for 30 mins or so, or until cooked throughout

5. Remove from the oven and allow to cool a little. I love to serve this dish with a side of tomato salad or veg confetti.
